Both in our forties, we decided to take our bikes to Morocco and avoid the Christmas Mayhem. We travel light, without panniers, but we camped under the stars a few times.

What a beautiful mountain range. Plus the anti and middle! Cycled through there with a guide and only two rear panniers. Snowing at the peak, glorious. Epic picture!
